1 T veg oil
3 1/2 # good quality boneless chuck roast
1/2 c low sodium beef broth
1T salt
1 T chili powder
1 t garlic powder
1 t onion powder
1 t cumin
1 t paprika
1 t freshly ground black pepper
lime & 1T minced cilantro
- season roast with salt/pepper, lightly
- sear roast over veg oil on all sides
- mix all seasonings and rub over all of roast, place in slow cooker (crock pot); add beef broth
- cover/cook low, 8-9 hours, or until meat is fork tender
- shred beef in crock pot; serve with a squeeze of fresh lime and a sprinkle of cilantro
