Grilled Lemon Dijon Pork Tenderloin

Ingredients

  • 1 ½-2 pounds pork tenderloin - see note
  • juice of ½ lemon
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian herb seasoning blend - or ¼ teaspoon each dried basil, thyme, oregano, and parsley or rosemary
  • ¼ cup oil
  • ½ teaspoon salt
  •  teaspoon cracked black pepper - or a pinch of finely ground black pepper
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey

Instructions

Marinate the pork
  1. Pat pork tenderloin dry with a paper towel.
  2. Stir together ingredients.
  3. Pour half of the mixture into a large Ziploc bag along with the tenderloin. 
  4. Press out excess air, seal the bag, and chill for 30 minutes.
Grill the pork
  1. Preheat grill to medium and oil the grates.
  2. Using tongs, transfer pork to the grill. Close the grill and cook 15-20 minutes, turning every few minutes to ensure even cooking.
  3. Brush reserved marinade over all sides of the pork half way through grilling.
  4. Transfer to a cutting board to rest for 5 minutes before slicing and serving.
Notes
*If pork tenderloin is more than 2 1/2 inches thick and you want no pink in the middle once fully cooked, cut tenderloin in half lengthwise to yield two thinner tenderloin pieces and proceed with recipe as written.

Sweet Potato Casserole, introduced by Margarita Selig


Easter 2022

First Thanksgiving at new house, 2022

Ingredients:

3 c. mashed sweet potatoes
1 c. white sugar
2 eggs, beaten frothy
1 tsp vanilla
1/2 c. evaporated milk
1/2 c. butter, melted
1 tsp. cinnamon
1 tsp. nutmeg

Topping:
1/2 c. brown sugar
1/4 c. flour
1/4 c. melted butter
1/2 c. chopped pecans


Instructions:
Beat all ingredients together. Spread in 8x8 inch pan. 
Mix topping ingredients together. Sprinkle on top of sweet potato mix. 
Bake 30 minutes at 350°.

Sour Cream Chicken Casserole, a twist on one of Mom's recipes.





*This is taken from the Vol. 2 Magnolia Cookbook; so good, but mom's is the quicker version.

Ingredients:

  • 1 Baguette torn into 1-inch pieces (about 6 cups) 
  • 7 Tbsp unsalted butter
  • 1/2 cup minced yellow onion (1 medium)
  • 1/2 cup minced celery
  • 1 garlic clove, minced
  • 2 Tbsp all-purpose flour
  • 1 tsp garlic salt
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 1/2 cups heavy cream
  • 5 cups shredded cooked chicken breast (home roasted or rotisserie chicken)
  • 1 cup  sour cream
  • 2 cups chicken broth
  • Freshly cracked black pepper for garnish
  • 3 green onions, minced (optional)
  • Chopped fresh parsley (optional)
Directions:
  1.  Lay the torn bread on a sheet pan and place it in a warm oven until dried out, 1 hour on low heat. Remove.
  2.  Increase the oven heat to 325°F.
  3.  In a medium saucepan,  melt 3 tablespoons of the butter over medium heat.  Add the onion and celery and sauté until tender and translucent, 6 to 8 minutes.
  4.  Add the garlic and flour and cook, whisking constantly, until fragrant but not burned, about 1 minute.  Add the garlic salt, salt, and pepper and slowly pour in the cream. Cook, whisking often, until just at a simmer, about 5 minutes.
  5.  Spread the chicken in a 9x13-inch baking dish and spread the sour cream on top. Pour the cream sauce evenly on top and sprinkle on the bread pieces. Melt the remaining four pieces of butter, mix in the chicken broth, and pour it over the casserole, coating the bread well.
  6.  Bake, uncovered, until bubbling, about 30 minutes. Broil the last 3 to 4 minutes for a good toasty top. Top with freshly cracked pepper and a sprinkle of minced green onions and parsley, if desired.

MOM'S SIMILAR RECIPE; HER ADAPTATION:

Mix one can of cream of chicken soup and 1 pint of sour cream (as a shortcut to making the sauce above).

Make up dressing to top.

I am curious if you would like this more or less than yours.  It is definitely quicker.

Cheesy Cornflake Potatoes, Family Party Throwback!

INGREDIENTS:
2 # Frozen Hash Browns
1/2 pint (8 oz.) Sour Cream
1 tsp. Salt
8 oz. Sharp Cheddar, grated
1 can Cream of Chicken Soup (10 3/4 oz can)

1 Stick Butter
2 cups Cornflakes


DIRECTIONS:
  1. Butter 9 x 13" glass pan
  2. mix 1st 5 ingredients together
  3. spread out in glass dish
  4. melt butter and mix with cornflakes
  5. top pan with buttered flakes
  6. Bake 1 hour @ 325 degrees; cover in foil for the 1st half hour

Maria's Cottage Quinoa Salad

Produce

1 cup Baby kale

1 Cucumber

1/2 bunch Flat-leaf parsley

1 Lemon (juiced)

1/2 cup Green lentils, cooked red brown

1 Red bell pepper

1 Tomato, large


Pasta & Grains

1 cup Brown rice, cooked

2 cups Quinoa, cooked


Oils & Vinegars

1/4 cup Olive oil

3 Tbsp White wine vinegar


Condiments

1 Tbsp Maple syrup


Baking & Spices

1/2 tsp Black pepper, ground

1 tsp Sea salt


Nuts & Seeds

1/4 tsp Cumin, ground

Joe Dougoveto's Venison Tips & Crock Pot Recipes (Per Ruby's request).

 It seems to me hit or miss based on the cut of meat. The best meat for us has been off of the hind quarter. Here's what we do and it's been very very good

Add to crock pot:
Golden mushroom soup (Campbell's)
Half bottle Cabernet Sauvignon
Lipton onion soup mix
Enough water to cover roast

All day on high. Over mashed potatoes hard to beat!! I'm sure if you don't want to use canned stuff you could create your own broth with onions mushrooms wine and such.

When we tried this out with the loins it was a little more tough.

We've also done all day venison stroganoff, as follows:

Cream of mushroom soup
Lipton onion soup
Diced Onion
Sliced Mushrooms
Water to cover
All day on high. Big scoop of sour cream before serving.

One thing I've read is that preparation is key. Removing any of the fat will take away the gamey flavor, and resting the meat similar to what they do with beef will help to tenderize it. 

We usually let it sit overnight in the sauce that it will be cooking in.

Mom's Blueberry Pie

 4 c. Frozen Blueberries

3/4 c. Sugar

1/2 tsp. cinnamon (optional)

1T. Lemon Juice

2 1/2 T. Tapioca (in box)

1/2 c. Water


Mix it all, cold & place in crust


**For all pies baked, throw a little sugar and flower on the bottom of the crust first!

**Dot all pies with Tbs. of butter before covering; slit and bake!

Italian Sausage & Vegetable Soup, from Megan Moore after Robert's Birth

 1# Italian Sausage (remove from casings, cook, drain


Heat in oil over medium until soft:

3 Large Carrots, peel/ cut into coins

1/2 Onion, diced

1 Rib Celery, diced


Add to veggies and stir, 1 minute:

1/2 tsp. Italian Seasoning

1/2 tsp. Salt


Add and Simmer, 15 minutes:

3 c. Chicken Broth

1 can diced tomatoes (28 oz.)

1 c. Tomato Sauce


**WHEN I DOUBLE THE RECIPE, I still only use 28 oz. diced tomatoes, and it is perfect.  Add tortellini, cooked separately, if desired.
