Maria's Cottage Quinoa Salad

Produce

1 cup Baby kale

1 Cucumber

1/2 bunch Flat-leaf parsley

1 Lemon (juiced)

1/2 cup Green lentils, cooked red brown

1 Red bell pepper

1 Tomato, large


Pasta & Grains

1 cup Brown rice, cooked

2 cups Quinoa, cooked


Oils & Vinegars

1/4 cup Olive oil

3 Tbsp White wine vinegar


Condiments

1 Tbsp Maple syrup


Baking & Spices

1/2 tsp Black pepper, ground

1 tsp Sea salt


Nuts & Seeds

1/4 tsp Cumin, ground
