Teriyaki BBQ Wings Sauce, By Monica.

I was making Dan French's wings and 1/2 the family doesn't like the hot sauce so looked up something for them.  This was such a hit that everyone was fighting over the wings and then the sauce to soak up with their pizza.


1/3 c barbecue sauce
2 T soy sauce (I use low sodium)
1.5 T brown sugar
A few good shakes sesame oil. 

Put at bottom of bowl, put finished wings in and coat.

Ham Balls. Family Picnic Classic!









Just know that it makes a lot and if you keep your hands wet when rolling the meatballs, it will be a lot easier.                                             --Therese Gross

Ham Balls. *This makes enough for two casseroles.


1 # ground beef
1 # ground pork
1 # smoked ham( ground well)
1 cup milk
1 cup cracker crumbs
2 eggs
2 T green pepper(I don't use these.)
pepper

  1. Mix well.  Wet your hands.   
  2. Form in balls.  
  3. Roll in flour and brown well in oil. 
  4.  Put in corning casserole.
  5. Pour over this:  
        • 1 1/2 cup brown sugar
        • 1/2 cup water
        • 1/2 cup vinegar
        • 1 tsp dry mustard
    6.  Bake in covered casserole about 350 degrees for 1 1/2 hours or so.

*NOTE:  This makes enough for two casseroles so I make extra sauce and pour it over 2nd bowl.  I put this in the freezer for later use.

*Noelle's inquiries responded to:  

  • I never thought of having the butcher grind (ham).  Good Idea.  I just do it in my blender.
  • I just sprinkle with pepper....do not put 2T of pepper.  2T is only if you chop up green pepper.
  • I do use white vinegar, but it does not specify.

Olive Garden Sausage Soup, from Josephine.

Olive Garden Sausage Soup:

1# mild Italian sausage
1/2 diced onion
1T minced garlic
6C chicken broth
2C water
3-5 yellow potatoes, diced
2t salt
1t pepper
2C heavy cream
4C chopped kale (calls for fresh, can use a combo of fresh or frozen or 1/2 kale and 1/2 spinach as well)
cooked chopped bacon for garnish

  1. Saute sausage in large pot til cooked. Remove w/ slotted spoon. 
  2. In same pot, over med heat saute onions. Then add garlic 1 min. Do not burn! 
  3. Add broth, water, potatoes, s and p and bring to a boil. Turn to med. heat til potatoes are tender. 
  4. Stir in kale, cream, and sausage. Add s and p if needed. 
  5. Simmer til kale is as soft as you like it. 
  6. Stir in bacon. 
  7. Serve w/ homemade croutons and a side of fruit.
It's actually a good summer meal and comes together quickly. Just fry and chop your bacon in the morning-only a few slices.

Shevin's Chili, Josie's vote of confidence! Crock Pot/Slow Cooker Soup.

Shevin's Chili:

put all ingredients in crock pot on low 5-6 hrs. Serve w/ rice. Top w/ sour cream, diced red onion, banana peppers, cheese, cilantro...

1# ground beef and 1# ground tky
1 can each black and kidney beans, drained
2 cans each stewed tomatoes, diced tomatoes, crushed tomatoes
2 packs McCormick chili seasoning
1 red onion, chopped
2-3 cloves garlic, chopped
Add a little soy sauce, taco seasoning, Worcestershire sauce, chili powder, banana pepper juice

NOTE: the first time I made it I under-seasoned everything, worried it'd be too spicy for my kids. Add more seasoning than you think.

Blueberry Muffins. Ruby's find. EXCELLENT!

Ingredients
1-1/2 c. all purpose flour
3/4 c. white sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 c. vegetable oil
1 egg
1/3 c. milk (lactose free is fine), *OR MORE as needed
1 c. fresh blueberries

Crust Ingredients: mix with a pastry blender or a fork/knife until you have a crumb mix!
1/2 c. white sugar
1/3 c. all-purpose flour
1/4 c. butter, softened
1-1/2 tsp. ground cinnamon, *I just did 2 shakes, and it was just fine!


DIRECTIONS:
  1. Preheat oven to 400 degrees; grease muffin cups or line with muffin liners
  2. Combine 1-1/2 c. flour, 3/4 c. sugar, salt, and baking powder.
  3. Place vegetable oil into a 1 cup measuring cup; add egg, and add enough milk to reach the "1 cup" mark.  Mix this with flour mixture.  If it is too thick, add milk until it pours reasonably.
  4. Fold in blueberries.
  5. Fill muffin cups just about right to the top. NOTE:  The original recipe suggests making only 8, and filling the empty muffin spaces with 1 cm of water to prevent pan-burning.  As you can see, mine went over and ran together.  Next time I will make 9, and not go right to the top with the muffin mix (still filling a cm of water in the empty tins when I bake).
  6. Sprinkle with crumb mixture (be generous; use it all up)!
  7. Bake for 20-25 minutes, or until done (toothpick test).

1/3 [of cup] Tea (whatever type)
1/4 c. lemon juice
handful of lettuce
1/2 avocado (Frozen or not)

1 scoop "vital reds"
1 scoop prebiothrive
ground cloves (2-3 shakes)
ground cinnamon (6 shakes)

mint sprig (4-5 leaves)
handful spinach
1/2 regular plantain (or 1/3 of LG plantain)

Gluten Free Turkey Soup, Mom's find, "Very good!"

1T Olive oil

1 Large Yellow Onion, finely chopped

1 Large Red Bell Pepper, chopped

1 Minced Garlic Cloves

1/2 t. Red Pepper Flakes


2 t. Ground Cumin

1# Ground Turkey Meat (Dark)

Salt/Pepper


2 cans Cannellini Beans (15 oz. each), RESERVE 2/3 C. of their liquid

1 c. Gluten-free Chicken Broth 

2 cans (4 oz.) Diced Green Chilies

1/3 C. Heavy Cream

1 t. dried Majoram


INSTRUCTIONS:

  1. In a large, heavy pot over medium-high heat, warm the oil.
  2. Add: onion, bell pepper, garlic, and pepper flakes; saute until the onion is translucent (about 8 mins.).
  3. Add cumin and stir until fragrant (30 sec.).
  4. Add turkey and sprinkle lightly with salt/pepper.
  5. Cook until turkey is no longer pink (about 4 min.).
  6. Add: beans and 2/3 c. of their liquid, broth, green chilies, cream, and marjoram.
  7. Bring to boil, stirring frequently.  Reduce heat and simmer (about15 minutes). *If desired, thin with more bean liquid.
  8. Taste/adjust with seasoning.


Optional Garnish:

Lime

Cilantro, Fresh/chopped

Shredded cheese: * Very good with goat cheese: white cheddar

diced peeled Avocado

Red onion, finely chopped

minced red jalapeno




Mom's Ribs & Carolina Style Rub




 

Carolina Style Rub *Makes 1 rack.

1/4 C. Chili Powder

2T Paprika

2T Black Pepper

2T Dry Mustard

2T Salt

2T Ground Coriander

1T Oregano

1T Ground Cumin

1 t. Cayenne Pepper


Instructions for Baking the Ribs:

  1. Remove the membrane (thin layer of white fat) off of baby pork ribs.  This is only on 1 side, FYI.
  2. Rub with the seasoning, above.
  3. Lay on heavy-duty foil, and top with ice chips (chipped from about 4 cubes; or just lay on the 4 cubes).
  4. Wrap tightly.
  5. Bake @ 350 degrees for 2-1/4 hours (*2-1/2  hours for 2 racks).
  6. Remove and let sit 10 minutes before unwrapping.
  7. Cut ribs apart and add BBQ sauce of choice.

1-1/2 c. freshly squeezed lemon juice
5 cups cold water
1-1/2 c. sugar
2 lemon wedges for garnish, *Optional
Ice


  1. Combine the lemon juice, water, and sugar into a pitcher.
  2. Stir until the sugar is completely dissolved.
  3. Add Ice and lemon garnish.  Enjoy!

Rob's Kale Chips



  1. Lots of Kale
  2. Preheat oven to 425 degrees
  3. Massage kale well/fully with olive oil
  4. Sprinkle with garlic salt (not too crazy)
  5. Bake 10-14 minutes, depending on the oven.

Cheesy Tater Tot & Egg Casserole, Great breakfast/brunch option.

 

Iris' 1st Communion.  May 2nd, 2021.

Recipe posted on Iris 9th birthday, a few weeks later when it was tested!


"Cheesy Tots"

1-32 oz. pkg. frozen potato tots

10 large eggs

6 oz. sharp cheddar cheese, shredded (1 1/2 cups)

1/2 c. whole milk

1/2 tsp. salt

1/4 tsp. pepper

*chopped chives/Ketchup for garnish/serving.


  1. Preheat oven to 350
  2. Lightly coat 7 x 11 in. baking dish with cooking spray
  3. Place tots in 2 even layers
  4. Whisk together: eggs, cheese, milk, salt, and pepper.
  5. Pour mixture over tots
  6. Bake until mix is set and cheese is golden brown, about 1 hour.
*Let stand 10 minutes and serve with chopped chives (garnish) & ketchup.





NOTE: I modified the amount, and did half of all the amounts in a pie dish; baking @ 400 degrees for 40 minutes.  You can mess with it based on your time and crowd size.

Josie's Chili, with Red Wine

Yes, Ziggy, I included you on this one. This is an awesome recipe because it tastes good, and it calls for 1 1/4C of red wine, so when you have an open bottle you are trying to get rid of, this recipe comes in handy. Originally passed on from Lee Franke:   --Josephine

INGREDIENTS:
6 oz Italian sausage
1# ground turkey (or beef, I like the tky, though)

2C chopped onion
1C chopped green pepper
8 cloves garlic, minced (can reduce if you like; I made mine w/ 6, but it wasn't that garlicky)
1 jalapeño, chopped (I did a half bc of the kids, but again, I couldn't taste it so wish I used more)

2T chili powder
2T brown sugar
1T cumin
1t oregano, 1/2t pepper, 1/4t salt
2 bay leaves

2-28 oz cans diced tomato
3T tomato paste
2 15 oz cans kidney or pinto beans (if don't like beans, just use 1 can)
1 1/4C merlot or cab. sauv

  1. Brown meats. 
  2. Add veggies, spices and stir. 
  3. Add tomatoes, paste, beans, and wine.
  4. Bring to a boil and simmer w/ lid on 1 hr. 
  5. Take lid off and simmer 30 mins. It actually tastes richer/better if you let it go longer! 
  6. Top w/ cheese, sour cream, cilantro, eat w/ chips, etc.

Brussel Sprouts Red Wine Vinegar Marinade

 

INGREDIENTS

  • pound Brussels sprouts
  • tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • medium shallot
  • tablespoons unsalted butter
  • teaspoon red wine vinegar


INSTRUCTIONS

  1. 1. Heat an air fryer to 375ºF. Meanwhile, trim 1 pound Brussels sprouts and halve any that are larger than an inch wide. Transfer to a medium bowl, add 1 tablespoon olive oil and 1/2 teaspoon kosher salt, and toss to combine.

  2. 2. Add the Brussels sprouts to the air fryer and shake into a single layer. Air fry, stopping to shake the basket (or rotate the pans in larger air fryers) about halfway through, for 15 minutes total. Meanwhile, prepare the shallot butter.

  3. 3. Finely chop 1 medium shallot. Place 2 tablespoons unsalted butter in a medium microwave-safe bowl and melt in the microwave. (Alternatively, melt in a medium saucepan over low heat, then remove from the heat.) Add the shallots and 1 teaspoon red wine vinegar and stir to combine.

  4. 4. When the Brussels sprouts are ready, transfer into the bowl or saucepan with the shallot butter and toss to combine. Serve immediately.


*I substitute scallions if I don't have shallots. You could also cook on stovetop and stir in marinade in the end

Oatmeal Raisin Cookies, Quaker Oats "Vanishing" Recipe (modified by Marya).

*Preheat oven to 350.

1/2 cup (one stick) butter, softened
3/4 c. packed brown sugar
1/2 c. sugar
2 eggs
2 tsp. vanilla
1 1/2 c. flour, heaped
1 tsp. baking soda
1 tsp. cinnamon    
1/2 tsp salt (optional)
1 c. raisins
3 c. quaker oats (quick or old fashioned, uncooked)

  1. Beat butter and sugars together until creamy
  2. add eggs and vanilla, beat well
  3. add combined: flour, baking soda, cinnamon, and salt; mix well
  4. add oats and raisins; mix well
  5. Drop dough by rounded Tbs. onto ungreased cookie sheets
  6. Bake 8-10 minutes, or until light golden brown
*OR make as BAR COOKIES: Bake 30-35 mins in ungreased 13x9 metal baking pan.

Chicken Pot Pie Casserole, found/modified by Marya

INGREDIENTS
*Optional

1/3 c. butter
3 stalks celery, diced
2 med. carrots, cut into coins
1/2 med. onion, diced
(*1-1/2 c. sliced fresh mushrooms)

1/4 c. flour
1 c. chicken broth
1 c. milk

4 c. diced, cooked chicken
1 c. frozen peas
1/2 tsp. salt
(*2 oz. jar diced pimientos, drained)

2 store-bought crescent roll packs


DIRECTIONS

  1. Preheat oven to 400 degrees.  In a large saucepan, heat butter over medium heat.  Add [mushrooms] celery, carrots, and onion; cook until tender.
  2. Stir in flour until blended; gradually stir in broth and milk.  Bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened.  Stir in chicken peas, pimientos, and salt; heat through.  Transfer to a greased 11x7 glass baking dish.
  3. Unroll the crescent rolls on top of the casserole.  I only cut and used what I needed from the 2nd pack (puzzle it together to cover fully), and just baked the rest of the extra rolls like normal, after.
  4. Bake, uncovered, for 15-20 minutes, or until golden brown on top!

To make ahead and cook later:
  • make inside mixture ahead and refrig.
  • once ready to cook, bake covered with foil @ 350 for 15 minutes
  • remove
  • raise temp to 400
  • carefully add unrolled/uncooked crescent roll crust on top
  • cook uncovered for another 15 minutes or so, until the crust looks right

Overnight Baked Blueberry Muffin Oatmeal

Ingredients

  • 1 3/4 cups old-fashioned oats
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 1/2 cups milk
  • 1 egg
  • 2 tablespoons butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

Crumb Topping

  • 1/4 cup cold butter
  • 1/4 cup sugar
  • 1/4 cup all-purpose flour

Instructions

  1. In a large bowl, stir together the oats, sugar, baking powder, and salt.

  2. In a smaller bowl, stir together the milk, egg, melted and cooled butter, and vanilla extract.

  3. Combine the wet ingredient with the dry in the large bowl, stir to combine. Then stir in the blueberries.

  4. Add this mixture to a pie pan, cover and store overnight in the refrigerator.

  5. In a small bowl, cut together the crumb topping ingredients. The mixture will be crumbly, like small peas you can press together. Store overnight (or you can make this in the morning, either way).

  6. Top the oatmeal with the crumb topping, then bake at 350°F for 30-35 minutes. If the crumb topping doesn't look golden brown and slightly crispy, you can set under the broiler for a minute or two.

Unbelievably Moist Turkey Meatloaf, Ruby-found & Noelle-approved

INGREDIENTS

8 ounces mushrooms, trimmed and very finely chopped

1 medium onion, peeled and finely chopped

2 garlic cloves, peeled and minced

1 tablespoon oil

3/4 teaspoon fine sea salt

1/2 teaspoon ground black pepper

1 tablespoon Worcestershire sauce

7 tablespoons ketchup, divided

1 cup (60 grams) panko bread crumbs

1/3 cup (80 ml) milk

2 large eggs, lightly beaten

1 1/4 POUND GROUND TURKEY (92% LEAN)


  • PREPARE MEATLOAF
  1. Heat oven to 400 degrees Fahrenheit. 
  2. Heat oil in a large skillet over medium-low heat. Add the onion and cook, stirring occasionally, until softened; about 5 minutes. 
  3. Add the garlic and cook until fragrant, about 1 minute. Stir in the mushrooms, a 1/2-teaspoon of salt, and a 1/4-teaspoon of pepper. 
  4. Cook until the mushrooms give off their liquid and it boils away; about 10 minutes.
  5. Transfer the onions and mushrooms to a large bowl, and then stir in the Worcestershire sauce and 3 tablespoons of the ketchup. Set aside to cool for 5 minutes.
  6. Meanwhile, combine the breadcrumbs and milk in a small bowl. Stir the breadcrumb mixture and the eggs into the mushrooms and onions. 
  7. Using a fork or your hands, gently mix in the turkey, a 1/4-teaspoon of salt and a 1/4 teaspoon of pepper. The mixture will be very wet.
  8. Form the meatloaf into a 9-inch by 5-inch oval in the middle of the prepared baking sheet. Spread the remaining 4 tablespoons of ketchup on top.
  9. BAKE MEATLOAF until an instant read thermometer inserted into the thickest part of the meatloaf registers 170 degrees F, about 50 minutes. 
  10. Let stand 5 minutes before slicing.

      ADAM AND JOANNE'S TIPS

  • Some stores sell ground turkey in 1 pound portions and others in 1 1/4 pound portions. While we like using 1 1/4 pounds, 1 pound of turkey is adequate for the ingredient amounts shared in the recipe.

INGREDIENTS
1-7 oz box Odense Almond Paste (grated using large hole side of box grater)
3/4 cup sugar
1 stick (4 oz) unsalted butter, room temperature
1 large egg
1 tablespoon grated lemon rind (1 large lemon)
2 teaspoons fresh lemon juice (from grated lemon)
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup Confectioner's sugar


Directions:
Step 1
Beat Almond Paste (grated using large hole side of box grater), sugar, butter, egg, lemon rind and juice until mixture is light and fluffy.
Step 2
Sift flour, baking soda, baking powder and salt into almond mixture. Mix until incorporated. Cover and refrigerate 1 hour or overnight. Dough stays well in refrigerator up to 5 days.
Step 3
Preheat oven to 350°F. Line baking sheet with parchment paper. Shape dough into one inch balls and roll in Confectioner's sugar. Tip: We used a #100 cookie scoop for consistency and ease.
Step 4
Place balls on baking sheets 2-3 inches apart. Bake 10-12 minutes or until puffed and lightly colored around edges. Place sheets on wire racks until cookies are cool. Store cookies in air-tight container between layers of wax paper.
