I called Aunt Lu tonight and this is what she shared:
(Bernie kept wondering how I kept you all alive when I don't know how to make a roast!!!!)
This is what my mother did:
Mom's Beef and Pork Roasts
- Make a pork butt roast with bone and a sirloin tip roast.
- Put roasts in a blue roaster. Season both sides with salt, pepper, garlic salt and seasoned salt. Top roasts with onion. Also top pork roasts with celery.
- Bake in 325 degree oven. Start with cover off until top browns. Half way through, cover. If it is dry add a little water. Basically, the slower you cook, the more tender it will be.
- Sometimes when cooking a beef roast, Aunt Lu tops the roast with a few slices of tomato to tenderize the beef.
- Mom often started with a frozen roast. Lu suggested 1 hour per pound. Lu said mom cooked the heck out of it.
