Mom's Beef & Pork Roasts/Grandma Doug's/Aunt Lu's

Hi Dear (Ruby Morris),
I called Aunt Lu tonight and this is what  she shared:
(Bernie kept wondering how I kept you all alive when I don't know how to make a roast!!!!)

This is what my mother did:

Mom's Beef and Pork Roasts
  1. Make a pork butt roast with bone and a sirloin tip roast.
  2. Put roasts in a blue roaster.  Season both  sides with salt, pepper, garlic salt and seasoned salt.  Top  roasts with onion.  Also top pork roasts with celery.
  3. Bake in 325 degree oven.  Start with cover off until top browns.  Half way through, cover.   If it is dry add a little water.  Basically, the slower you cook, the more tender it will be.
  4. Sometimes when cooking a beef roast, Aunt Lu tops the roast with a few slices of tomato to tenderize the  beef.
  5. Mom often started with a frozen roast.  Lu suggested 1 hour per pound.  Lu said mom cooked the heck out of it.
