Ruby's Tilapia Rub

Lay out fillets and sprinkle on 1 side:

Salt
pepper
cumin
paprika
small amount of chili powder

  1. In a hot pan coated with olive oil, place it--seasoned side down--and then season the top side, too.
  2. When seared, 1 min or so, flip and then squeeze 1/2 a lemon over tilapia...maybe add a little butter to the pan, as well.  Ruby: We always enjoy em!
*Sometimes I flip another time or 2 to then pick up the flavor of the lemon/butter, but that's optional.
